This still wine is exemplary of the Tualatin Hills sub AVA. So often found in this terroir is a light herbal note of savory and thyme. When served on a warm summer day and paired with spicy proteins, you will capture even greater notes of fruity complexity.
Nose - Medium to light intensity. Early Red Haven peach, orange blossom and WildFlower honey are expressive and inviting.
Palate - Medium intensity. Youthful Rainier cherry, melon and lime curd show a balance with 11.2% alcohol. Any residual sugar is clean and light as it carries with it both fruit and savory notes. At times, a very subtle sanguinity of wild game and crushed gravel gives a complexity that is beautifully balanced with the light body.
Serve with cedar plank salmon filet on Thai chili vermicelli noodles with micro greens, and spicy pork wontons.
